煲粥婆 Summer Time Restaurant

您同意嗎沒有東西可以比和一群朋友和同事一起吃午餐, 更令人高興的是每個人都期待著從繁忙的工作中偷偷溜出來吃一頓午餐。 管他是豐盛的午餐還是簡單的午餐。我們期待的是一陣短暫的歡笑和聚會。

20181031_煲粥婆 IMG_6978 煲粥婆曾經位於 Kampong Malabar (日本新路), 我一直試圖在這裡用餐多次,但很多次都讓我失敗, 要不它關門還是什麼的。我相信煲粥婆的前身是蘭亭粵菜小廚, 也是我試圖要光顧的地方之一。

據說許多網友和博客都介紹煲粥婆的招牌菜是螃蟹粥。
在檳城有許多地方都可以找到螃蟹粥,但是,如果您要像粵式粥這樣的粥,那麼這裡就是您的最佳選擇。 為什麼?因為他們煮的粥煮至軟綿綿, 加上他們用新鮮的材料例如螃蟹和蝦, 和撒些許芝麻油,那芝麻氣味簡直撲鼻使您感到飢餓。那芝麻氣味和新鮮的海鮮可以讓您吃上兩大碗粥。

一只独创手撕鸡必須提前一天預訂。我想他們需要一天醃製,這樣才可以使味道更完美。聽說手撕鸡是一道中国的地方传统名菜,属于川式凉菜。一般选用三黄鸡为原料,其中,外皮金黄可谓手撕鸡的卖点之一,在金黄的鸡皮上,晶莹而散发甘香,肉质细腻,油脂适中,鲜美含汁,嚼之既不油腻也不柴硬,并带有浓郁的鲜香味,直至骨髓。可是煲粥婆的作法和中国的传统名菜有點不同。煲粥婆的作法是燒烤的, 還有蝦餅和沙拉伴飾。還蛮不錯的。

炒青龙菜豆芽 - 青龙菜是近年來才成為桌上的最紅的菜肴。聽說只有怡保附近的金馬侖山上才有栽種,是一名劉姓退休的農業科學家近年才新培育成功的。青龍菜顏色淺綠,外觀似韭菜,口味也接近韭菜或青蒜,不過氣味淡一點,口感更爽嫩。大部分的人是拿來清炒要不就與綠豆芽同炒。

另一道菜就是川菜的水煮魚, 但我們選了石斑鱼。石斑鱼含有的蛋白质、氨基酸、脂肪丰富,而且吃的时候,也是比较容易消化,对身体各方面,都是不会有任何的损害。水煮魚是川菜經典, 香麻辣的麻辣湯底,蒜末,辣椒,花椒粒和乾辣椒還可以发挥御寒、益气养血功效。

龙皇豆腐,一道名字高档的菜肴。为什么会叫龙皇呢?有龙有皇吗?这里,我们要从它的做法说起。 先说龙皇豆腐的材料。制作龙皇豆腐,需要用到菇香,蛋青,鲜虾仁,还有豆浆豆腐,鲍汁等。可见,这道龙皇豆腐菜肴,用料还是挺讲究的,至少给人一种高档的感觉。不错,龙皇豆腐的确不是太大众,但自然也不是太贵,太贵了就不好消费了。

东坡肉,咱們朋友最喜歡吃的其中一個的菜肴, 它也是眉山和江南地区特色传统名菜。东坡肉在浙菜、川菜、鄂菜等菜系中都有,且各地做法也有不同,有先煮后烧的,有先煮后蒸的,有直接焖煮收汁的。 东坡肉的主料和造型大同小异,主料都是半肥半瘦的猪肉,成品菜都是码得整整齐齐的麻将块儿,红得透亮,色如玛瑙,夹起一块尝尝,软而不烂,

尤其我們对建康頗有講究的,最重要的就是东坡肉最好是肥而不腻。 对吗?

Golden Phoenix Restaurant


This year Chinese New Year passes very fast, and things happened just too fast till you can’t cope with it.  From the day, our boss was here for meeting and we organized a dinner in Golden Phoenix, things just gone so fast so that I didn’t rest well.

And the entire February is gone, and we are now in March, after few more weeks there’s the time many of us will practice Qing Ming for the ancestors. Time to see many folks busy buying paper clothes, paper cars and so on for the prayers. Some are even travel outstation to perform the prayers too.

Let’s not move too fast with that… capturing some light moment that we have before the New Year with our colleagues and superior in Golden Phoenix, Equatorial Penang. 

We do have Muslim colleagues in the team thus getting a Halal Chinese Restaurant would be more appropriate for this dinner. I guess nowadays most of the restaurants in the hotels are practicing Halal food and even practice too.

Since is approaching Chinese New Year, a plate of Yee Sang is something that shouldn’t be missed. Everyone was happily tossing the ingredients, and even happily saying have good bonus, good increment, good promotions, less customers’ complaints, less escalations, etc. It was honestly a cheerful moment when each one of us shouting for those prosperity words or greetings.

Sze Chuan Soup, it’s a special request from our manager whom loves the tangy taste. Though sour but this is honestly Golden Phoenix all time favourite. Tried this when we were young, and the taste didn’t change much too.

Roasted Chicken with Prawn Crackers. Though is something ordinary but I would have to admit that the marinade of the chicken actually make the chicken perfect, and it roasted evenly, the skin was honestly crispy too.

Marmite Prawns, prawns represents laughter, and it’s a must have dish on Chinese New Year. It represents laughter in the family and it would last as long as years.

Deep Fried Kailan and Stir Fried Assorted Mushroom with Brocolli. This is a vegetable dish that the hotel recommended. And in fact, this dish you would be surprise to know they fry with Chili Padi. Reason is to get the taste of it, and to make the whole dish more fragrant. Whoever got it, you can say that it’s a pretty good Jack Pot! (Am sure whoever read this, will laugh out loud)

Cantonese Steam Soon Hock Fish. When comes to steam fish I would have to op for Cantonese Style, not because am a Cantonese but honestly it has its unique taste and it will never go wrong with that. Soon Hock is one of the expensive fish in all the restaurants, I believe it’s due to their meat texture and its freshness.

Sze Chuan Fried Rice. The second last dish that ends the dinner. Each rice was perfectly covered with the special made sauce.

Last, is the dessert. We were debating should we op for cold dessert or warm. Ended up, most of us opted for hot dessert and they were recommended this Water Chestnuts Dessert for us. It was absolutely warm our stomach on a raining day.

Though this may be a bit too late for Chinese New Year, however, it was a warmth and happy dinner that I ever attended.

If we wouldn’t be invited for a cousin’s son’s wedding, guess I will not have a chance to step foot into this spacious restaurant in town. It is so spacious that it could actually cater for almost 70 to 100 tables for any wedding banquet.

To cut it short…. Here are the dishes that fill up each our stomach with a big grin.

Chinese New Year: Day 1 Lunch 大年初一


Chinese prone to have many customs and traditional forbidden rules, for example, any family that has conducted any funeral within a year, it’s advised not to celebrate Chinese New Year. They believe this is disrespect to the deceased. The Hokkien believes not to celebrate any major festive for almost 3 full years, the major festive or prayers are mainly Winter Solstice (Dongzi 冬至), Chinese New Year Day 9 Heaven God Prayer, etc.

Like I mentioned before, because of my late Mother-in-law passing, we were on vegetarian for full 49 days, this year new year, we did not celebrate, not even mentioned about reunion. Because of all that, it’s the children’s duty to look after the left behind father. Thus, it was my first encounter to prepare new year dishes for the first time.

Many people believe or rather Buddhist believes on any day1 or day 15 of the lunar month, is advisable to consume vegetarian food. So, with that belief, I cooked vegetarian dish for the day, apart from that, I also cooked others.

2012_01_23 CNY Day 1 005aSing Ning’s Style of Vegetarian Dish (新寧素菜)

Ingredients
Foo Yu (腐乳), 2 cubes
Nam Yu (南乳), 2 cubes
3 to 5 Tablespoon of sugar
Cloud Ear Fungus (雲耳) 100 gram, soaked in water
Chinese Cabbage, 800 gram (Cantonese called that Wang Nga Bak (黃芽白)
1 Tablespoon chopped ginger
Deep fried beancurd skin & Glass Noodle (冬粉 Tang Hoon)

Method
1. Mash both type of fermented bean curd into a small bowl
2. Cut the Chinese Cabbage into 1 inch to 1.5 inches long
3. Heat the wok with about 2 tablespoon of vegetable oil
4. Add in the chopped ginger and stir fry it till fragrant
5. Add in the mashed fermented bean curd and stir fry it till frangrant
6. Add about 2 cups of water, let it boil and add in the fungus and the vegetables
7. Let the ingredient soak into the boiling sauce and simmer it till the vegetable soften
8. Once done, dish out the dish, and add in the deep friend beancurd skin and glass noodle in the sauce

Hoe See Fatt Choy (Dried Oysters and Black Hair Moss Braised Mushroom) (發菜蠔豉燜冬菇)

Ingredients
Pork Leg, 500 gram (Half legged size)
Dried Oysters 400 ounce (啢)
8 Dried Mushrooms
4 tablespoons dark soya sauce
100 ounce of Black Hair Moss (發菜)
Salt  

Method
1. Boiled the pork leg for about 20minutes
2. Soak the dried mushrooms till it soften
3. Soak the dried oysters and wash it clean
4. Prepare the slow cooker pot and put all ingredients into the pot except the black hair moss
5. Cook it thru for about 2 to 3 hours on high heat then turn into low heat after 2 hours
6. Last is to put the black hair moss into the pot before serving
7. Salt to taste

Steamed Waxed Meat (蒸臘肉)
This is the most easiest dish the other 2. You just have to steam the meat for about 20 to 30minutes and cut it into strips.

人生有幾多個十年, 最重要活得痛快!

The above statement is something that ponder me always. How many of us could stay at the same work place for 30 long years? Well, I guess without your persistent, patient and courage, I believe no one could.

After 30 years of working, my manager will be retired from this hectic, stressful and “fun” work place and will be enjoying his retirement journey with his loved one. Due to his retirement, our boss gave him a luxury dinner which we never have the opportunity to try it, I guess when you work for the same company for 30 years. Thanks to him, we managed to enjoy the meal and it was a wonderful gathering among the staff.

We chose 1881 Chong Tian Cultural Hotel as the venue. First of all, it’s a heritage hotel, secondly, it’s newly open after a massive renovation to its original heritage design and it’s a place worth of visiting. The hotel has 11 suites, and the 11 suites designed or rather represent the 11 Chinese surnames that first landed in Penang, if am not mistaken as it consists of Khoo, Lee, Tan, Lim, Ooi, Ong, Chuah, Yeoh, Koay, Loh and of course the owner’s surname Seah which represent the largest suite in this Hotel. The owner of the hotel even bought those antique furniture and artifacts from many countries; the one that is more significant is the Emperor’s China brush (毛筆) which cost millions. The whole building is painted with heritage colour to make it look more authentic of olden days building.  Again… anyone knows what colour is that?

Before I proceed with the intro on those dishes… how many of us know about this building’s history. I was told, this building was once a brothel. The women were all kept in a special room before they were called to provide the service. All the ladies are kept in this special dedicated room with a rope tied to a bell. Whenever there’s customer visits, the owner will ring the bell, and the woman will come forward parading in line to the presence of the customer to pick their choice of lady.

After many years passed by, less and less people patronized the brothel, and it was converted to a residential building then. Before the building was sold to current owner, it was being left vacant for a long time. And after Penang was awarded the UNESCO title in year 2008, it has brought the entire Pearl of Orient a new life. Thus, 1881 Chong Tian was borne and established.

A man with strength, patient and persistent in his beliefs has contributed much to his service, his knowledge and passion into his job. To celebrate his retirement journey, we celebrated with these luxury food to indulge ourselves within the few hours!

First dish is the appetizer… which is highly recommended by the staff. That is fresh scallops with mushrooms, macadamia nuts and beans that was served in a nice champagne glass. That made the appetizer more delicacy, the chef added a prawn that is covered with almond slices, and a bacon that nicely wrapped with asparagus.

Next come the second dish which is Conch Meat Fish Maw Double Boiled Soup (花膠響螺燉老雞). The soup is tasty and it’s definitely good for health especially for us that is working under such intends stress environment. Why would I said so, well basically next year economy isn’t that promising especially many investors have predicted it would be a tough year ahead next year.

Typical Cantonese delicacy dish is Braised Goose Web and Abalone (鵝掌燜鮑魚).  Isn’t it indulging ourselves? I could taste the gravy was braised with specific ingredients like clove (丁香), and abalone sauce. If you’re not a fan of any creatures’ feet, you can opt for Lamb instead. A pan fried lamb also goes well with the abalone, it doesn’t have the smell that overcome the abalone.

Cantonese Steamed Pomfret (斗底魚), another indulging dish. An expensive pomfret that go as high up to RM90 per fish. In order to know the fish freshness, best is to go for steaming, especially Cantonese Style.

Last, Sambal Fried Four Heavenly King was the last dish served on the round table. The sambal was sourish and it was honestly appetizing, especially after a heavy meal. It does help in terms of digestion.

Nothing could end without a dessert. Peanut Paste Soup (花生糊), Honeydew Sago and a plate of Chinese Pancake (鍋餅) was the last dish of the dinner with a perfect mark and a respect to our dear manager that has been working for the past 30 years.
