SAMBAL


Sambal
serves modern cuisine inspired by both Oriental and European influences—with a twist. That said, I personally noticed more Oriental elements than European.

Overall, it’s a great place to visit, especially for a quick meal or when dining with a group of friends. Price-wise, it’s on the higher side, but you won’t regret it.

One downside is the location—it’s situated along one of the busy streets in Penang, such as Beach Street, so parking can be challenging. However, no worries—there’s a large paid parking compound directly opposite the restaurant, though the parking fee can be slightly pricey.

Now, let’s move on to the food.


We started with a few appetizers. The first was 3 Girls with a Dirty Guy—what a catchy name, right? I assume it refers to a combination of comfort food with a rich, savory (“dirty”) concept. This dish features fluffy steamed baos paired with grandma-style traditional salted fish pork patty, served in three ways: Original, Sambal Butter, and Char Siew Sauce.

On my next visit, I’d like to try their 3 Nuns with a Monk (a vegetarian starter).



Next was the Kerabu Glass Noodles with Prawns. It’s similar to Thai kerabu, but Sambal replaces the usual base with glass noodles. The dish is refreshing, though we felt it could have been spicier.


For the main dish, we ordered Udang Entangled. The soup is made from their house recipe broth, enhanced with fresh milk and Shaoxing cooking wine, and served with two large fresh prawns.


We also had their signature Lap Mei Fan, which was actually the main reason for my visit. This is a must-try entrée—don’t miss it!

 


Another dish we ordered was the Rempah Ribs with House Special Pickled Lotus Root. The pork prime ribs are marinated with house-blended local wild herbs and slow-roasted in fresh coconut water for up to six hours.



On top of that, we also tried the Char Siew Bip Rice—aromatic jasmine rice paired with caramelized BBQ pork belly (char siew), a free-range sunny-side-up egg, and chili padi.


Lastly, we had Teo Chew Nang before heading elsewhere for dessert. So what is Teo Chew Nang? It’s their handmade Teochew noodles served with bean sprouts, Chinese chives, dried shrimp, and crispy pork crackling. It was super delicious!

I will definitely be back to try their other signatures such as Sambal Udang, Grilled Rempah Chicken (which takes about 30 minutes to prepare—worth the wait!), Grilled Barramundi with Kerabu Mango Salsa, Japanese in Malaysia, and many more.

Chinese New Year Cookies: Nam Yue and Sesame Cookies

All these while many people will make something sweet for the new year. Well, this year, I stumble upon my old Flavor Magazine on this recipe. I guess something different; at least it’s a savory type of cookies. Would you be interested to try?

Ingredients
250g butter
¼ teaspoon salt
140g icing sugar
1 Grade A egg

2 pieces (25g) Nam Yue (preserved red beancurd), mashed lightly with a fork
1 teaspoon pounded garlic (I actually grated it)
440g plain flour, sifted
1 teaspoon bicarbonate of soda, sifted
1 teaspoon baking powder, sifted
40g black sesame seeds
50g while sesame seeds
100g chopped walnuts


Method
1. Preheat oven to 180ºC. Grease baking trays.
2. Using an electric beater fitted with the paddle attachments, cream butter, salt and sugar.
3. Beat in egg until well combined.
4. Add in Nam Yue and garlic; mix well.
5. Add remaining ingredients and mix into a dough.
6. Chill the dough for 30 minutes.
7. Shape the dough into 3cm-diameter balls.

8. Place the dough bals on trays and gently press down at the centre of each ball to make an indentation.
9. Bake for 20 to 25 minutes, or until lightly brown.

10. Cool on a wire rack before storing in an airtight container.

Chinese New Year: Day 1 Lunch 大年初一


Chinese prone to have many customs and traditional forbidden rules, for example, any family that has conducted any funeral within a year, it’s advised not to celebrate Chinese New Year. They believe this is disrespect to the deceased. The Hokkien believes not to celebrate any major festive for almost 3 full years, the major festive or prayers are mainly Winter Solstice (Dongzi 冬至), Chinese New Year Day 9 Heaven God Prayer, etc.

Like I mentioned before, because of my late Mother-in-law passing, we were on vegetarian for full 49 days, this year new year, we did not celebrate, not even mentioned about reunion. Because of all that, it’s the children’s duty to look after the left behind father. Thus, it was my first encounter to prepare new year dishes for the first time.

Many people believe or rather Buddhist believes on any day1 or day 15 of the lunar month, is advisable to consume vegetarian food. So, with that belief, I cooked vegetarian dish for the day, apart from that, I also cooked others.

2012_01_23 CNY Day 1 005aSing Ning’s Style of Vegetarian Dish (寧素菜)

Ingredients
Foo Yu (), 2 cubes
Nam Yu (南乳), 2 cubes
3 to 5 Tablespoon of sugar
Cloud Ear Fungus (雲耳) 100 gram, soaked in water
Chinese Cabbage, 800 gram (Cantonese called that Wang Nga Bak (芽白)
1 Tablespoon chopped ginger
Deep fried beancurd skin & Glass Noodle (冬粉 Tang Hoon)

Method
1. Mash both type of fermented bean curd into a small bowl
2. Cut the Chinese Cabbage into 1 inch to 1.5 inches long
3. Heat the wok with about 2 tablespoon of vegetable oil
4. Add in the chopped ginger and stir fry it till fragrant
5. Add in the mashed fermented bean curd and stir fry it till frangrant
6. Add about 2 cups of water, let it boil and add in the fungus and the vegetables
7. Let the ingredient soak into the boiling sauce and simmer it till the vegetable soften
8. Once done, dish out the dish, and add in the deep friend beancurd skin and glass noodle in the sauce

Hoe See Fatt Choy (Dried Oysters and Black Hair Moss Braised Mushroom) (發菜蠔豉燜)

Ingredients
Pork Leg, 500 gram (Half legged size)
Dried Oysters 400 ounce ()
8 Dried Mushrooms
4 tablespoons dark soya sauce
100 ounce of Black Hair Moss (發菜)
Salt  

Method
1. Boiled the pork leg for about 20minutes
2. Soak the dried mushrooms till it soften
3. Soak the dried oysters and wash it clean
4. Prepare the slow cooker pot and put all ingredients into the pot except the black hair moss
5. Cook it thru for about 2 to 3 hours on high heat then turn into low heat after 2 hours
6. Last is to put the black hair moss into the pot before serving
7. Salt to taste

This is the most easiest dish the other 2. You just have to steam the meat for about 20 to 30minutes and cut it into strips.

Chinese New Year: Steam Boat Dinner

Every year New Year eve we will normally go out for food, eventhough we don’t, we will do pot luck, each one of us, as in the daughters-in-law will prepare something and bring it to one of the in-law’s house for dinner. About 5 years ago, some how the elderly finally accepted my proposal for eating out, and since then we have been eating out, and we’ll start making reservation a month ago things like that. We even have taken dinner in Vistana Hotel, Cititel Chinese Restaurant, Red Rock Hotel, etc.

Today, I truly understand and comprehend how our mother prepares food for reunion each year. When comes to this point of time, my mother will be stressed out, though many times we’ll tell her take it easy. You know what? It’s always say easy than done!! And truly is!!

From marketing till today preparing… I was so stress!!! Especially marketing, people are bargaining with the food stall, vegetable sellers for better price. Some old aunties are even bargaining on chicken, what type of chicken is best of steaming, and some couple are busy looking at what type of fish balls to buy for steamboat. Some even brought their kids to market, it’s like contributing to the market traffic! Because of each of everyone have the ‘Kia Su’ attitude and many will want to ‘Balik Kampong’ or ‘Siu Kang’ (收工), when comes to this period of time, basically these stalls will increase their price and make a ‘fortune’.

Chinese beliefs or even we called it the customs, any elderly passed away within a year, family members as in their sons, daughters-in-law are not allow to celebrate any festival like Chinese New Year or even Pray Heaven God. Some clan like Hokkien is practicing 3 years, Cantonese practiced for 1 year. Due to this customs and beliefs, we did not celebrate and a simple dinner was held at my place.

A peaceful, quiet dinner surrounded by these food and with the company of the elderly old man, my brother-in-law and family. Something that I had prepared for it, guess I’ve enough of saying…. Oh ya, added to this year New Year… is the weather is also contributing to the stress, the sudden change that causes many of us sick. When I see doctor, doctor will normally ask, did you eat a lot of Chinese New Year cookies, and the fact is am completely ignorant, and for that matter, I am restricting myself of eating too much also.

Anyway, here are the list of food that I’ve grabbed from the market, and some are mommy helped me to buy. [wink] I know I know… am lucky in that sense!

How to make your soup base? I thought that’s difficult, but honestly, it’s kind of simple. Just get yourself a whole chicken bone, and 1 or 2 chicken meat. First of all boil a pot of water and put your chicken bone into the pot of water to cleanse it thoroughly. Once done, remove it and put that into a 2 litre pot of water and boil that for 2 to 3 hours. Add salt to taste. Once done, you can add the deep fried fish head into the soup, that will make the soup even more delicious. Oh yes, remember to add in garlic oil and fried garlic to make the soup more fragrant.

Starview Restaurant (Prai) Sdn Bhd 仙景樓飯店

I know I’ve not get over the Yee Sang thing as commented by After Giovanni. But I still gotta get it done otherwise, it will be lied in my draft folder for another year. [LOL]

This dinner was held on the 7th Day of CNY, that’s what everybody call it Everybody’s Birthday. This day, mostly Cantonese will cook fish porridge and birthday noodle for the family. And Yee Sang is a must dish for that day too.

Some how this year, mom is too tired to cook, decided to eat out, and here we are in Star View (Prai Branch).

With all the Yee Sang that I’ve had thru out the CNY, this is the best Yee Sang that I’ve tried compared to Vistana Hotel’s Reunion, Kim Hee Restaurant in Seberang Jaya and Four Season Tea House.

Since we didn’t want the full CNY Package, the captain was nice to introduce these simple dishes for us which consists of chicken, bean curd, pork ribs, vegetables, etc.

My sister loves the bean curd so much, she said it’s smooth and soft. But I like Abalone that put on top.

Dad loves the vegetable; he said the serving is very generous.

The salad prawns are fresh, and it’s tender and juicy.

The chicken is nice, I believe its coated with flour and deep fried before it stir fry with honey and their special sauce.

Braised Pork Ribs is nicely done, and it’s braised with mushrooms, carrots and Chinese Leeks.

Basically, Star View is so well known that you need not to review much of their food quality. Please refer below for other reviews.

Four Seasons Tea House 四季亭小食館

Day 6th of Chinese New Year… another gathering from the in-law’s side. This time, it’s a huge gathering where it includes uncles, aunties and the rest of the cousins. At least, it has to be about 6 to 7 tables.

The older generation practiced this gathering every year, and it is more of gathering instead of having food together. Well, I guess that’s another way of improving one and other’s relationship and time to catch up with each other.

It was a simple dinner and it was arranged by the old folks. Food wise, of course, it can’t compared to the famous Chinese restaurants in town… but down deep in heart, the older generation are enjoying themselves. Reason only 1, they could get to see all their ‘cucu-cici’ all in one time.

At this point in time, no doubt Yee Sang is always served first. But this Yee Sang that we had for many days its one of the worse. The taste was a bit odd, it taste like sesame oil instead of vegetable oil that needed to pour on to the Yee Sang. Thus, it has spoilt the taste of it.

Second thing is the quantity that was given, look at the miserable few pieces of salmon. Isn’t it miserable?

I know I know… nobody cares for that, most of us are enjoying catching up with each other. Talking about economy crisis, talking about country’s politics, etc.

Since the uncles had decided to arrange this sit-down dinner, thus, dishes are being served one-by-one.

First, a clear vegetable soup was served.

Followed by a Mango Chicken.

And, Braise Chinese Cabbage with Mushrooms and Dried Oysters.

Braised Pork Knuckle, am sure this is gonna be my father-in-law’s suggestion, cuz, that’s his favourite.

And, last 4 Season Signature Popiah.
